Dinner at My House

So, let me start off by saying I hate to write and I most definitely hate to write about personal stuff! I am not very good at writing. So, please bear with me on all the grammatical errors and misspellings. :) I really want to start sharing a little bit about me and my life on this blog so you all feel like you know a little bit about me. I had no idea where to start until this evening... I tried to cook dinner again.
It turned out like most nights. I start out with all these new recipes, or more like ideas, of what I want and end up with a disaster! I usually end up with edible food on the table (thank goodness) but it is most definitely not what I intended from the get go. :) Let me just share with you an example from this evening.
So, a little background...
A good friend of mine usually comes over for dinner once a week and she is a great cook. She loves to follow recipes though, which I totally struggle with. You would think it would be easy but it is not! So, I decided I would cook something that she had taught me a few months ago. I have done it with success before but with her help. We got these recipes from the Pioneer Woman Cookbook, which I highly recommend. It even has step by step pictures. I can almost follow a recipe with pictures! :)
Anyways... I decided I would try twice baked potatoes.
Above are the twice baked potatoes I was supposed to make. Ooops! Something went completely wrong. I like to think I created something new. I tried to finish them but they were super super chunky. I thought I overcooked them but soon found out they were just not cooked long enough. Can you tell I have not been cooking long?
I would like to call these twice baked chunky mashed potatoes! :)
In the meantime, I threw in some taco and ranch seasoning with sour cream. I wanted something to snack on so I could pregame my dinner. :) It actually tasted pretty good.
I ended up throwing the chunky mashed potatoes in the oven one more time thinking that would make things better...not quite. I did try Ranch, pecan and crushed crackers on my chicken. I thought that was pretty good. So some of my concoctions sometimes turn out but it is definitely rare!
Looks are definitely deceiving...as my wonderful friends and husband soon found out!
At least I tried to cook. It was not all lost. So, if you have any good kid friendly recipes, I would love to try them out! :) Thanks so much!
